Kısır or qisir is a traditional side dish in Turkish cuisines. The main ingredients are finely ground bulgur, parsley, and tomato paste. It has a reddish color due to tomato paste admixture. It can be eaten cold and used as a salad or meze. My mom did today for lunch and i want to share with you her secret :).. If you never eat this light and delicious salade-kisir , you must try.. So easy to make and fast.. hier is recipe:
ingredients
-3 cup finely ground bulgur
-some hot water ( see video)
-1 and 1/2tablespoon tomato paste
-some lettuce, ( finely chopped)
-half red pepper( finely chopped)
-1 onion (finely chopped)
-half green pepper (finely chopped)
-2 tomatos
-some parsley (finely chopped)
-2 tablespoon olive oil
-half lemon
-1 teaspoon salt
-Spices ( 1 teaspoon for all -
cumin, blackpepper, thyme, red pepper, mint )
Instructions
Put the bulgur in a large mixing bowl. Pour the boiling water over it. The water should completely cover the bulgur by about ¼ inch. If one cup isn't enough, add a bit more water. Cover the bowl with a lid or plastic wrap, then wrap it with a towel. Set it aside for about 15 minutes to allow the bulgur soften.
While the bulgur softens, prepare your vegetables. Start with lettuce. Cut finely peppers, parsley and onion..Continue chopping the tomato and set aside..
Now, our bulgur is soft.. put in a hot griddle bulgur, olive oil ,tomato pasta, salt, and spices.. roast slowly.. set aside for 5 min.
Add the bulgur mixture to chopped vegetables , add lemon , some olive oil and mix well.
You can serve your 'kısır' salad right away and if you want you can serve with some pickles.. Just perfect for a lunch :)
