Berry Kremali Cikolatali kek

Kek malzemeleri;

300 g (1 1/2 bardak) un 200 g (1 bardak) seker 90 g (2/3 bardak ve 2 yemek kasigi) organik kakao tozu 1 yemek kasigi soda 2 yemek kasigi hamur kabartma tozu 1 cay kasigi tuz 2 yumurta ( oda sicakliginda) 240 ml (1 bardak) , yayikalti sut , en francais le lait battu(oda sicakliginda) 240 ml (1 bardak) nescafé, (sicak) 120 ml (1/2 bardak) hindistan cevizi yagi veya aycicek yagi 1 tatli kasigi vanilya ekstrasi

Cipma kabinizda once ununuzu sonra kakao tozunuzu ve beraberinde kabartma tozu ve sodayi da eleyerek ekleyin.Tuz ve sekerinizi de ilave edip kenara ayirin. Diger bir cirpma kabinizda yumurtalarinizi cirpin. Sonra sirasiyla yayikalti sut , kahve , yag ve vanilyayi ekleyip karistirmaya devam edin.Unlu karisiminizi yavas yavas ekleyerek cirpmaya devam edin. Ben 2 adet kek kalibi kullandim (20 cm) genisliginde , karisiminizi ikiye bolerek kaliplariniza dokun ve 180 derecede 25-35 dk pisirin. kurdan yardimiyla kekinizi kontrol edin.

Kremasi; 56 g (1/4 bardak) tuzsuz tereyagi, ( oda sicakliginda) 230 g (2 bardak) toz seker 450g (16 oz.) mascarpone, (oda sicakliginda) 113 g (4 oz.) krem peynir (oda sicakliginda) 125 gr siyah berry ( berrylerinizi kucuk bir sos tencerenizde 1 kasik toz seker ve 2 kasik su ile orta ateste pisirin.berryler suyunu cekip recel kivamina gelince ocaktan alin ve sogumaya birakin)

tereyagi ve sekeri cirpma kabiniza alin ve iyice cirpin.Mascarpone ve krem peynirinizide ekleyip cirpmaya devam edin.(1 dk dan fazla olmamak sartiyla) ve son olarak berry karisimindan 1 yemek kasigi kadar ekleyin( geri kalan berry karisimimizi ic kremasi icin kullanicaz.)

Ic kremasi 2-3 yemek,kasigi cirptigimiz krema karisimi, geri kalan berry karisimi,

Kucuk bir kapta hazirladigimiz kremadan 2-3 yemek kasigi alin ve uzerine geriye kalan berry karisimini ekleyin (yaklasik 2 yemek kasigi) ve iyice karistirin.

kekleriniz pisip soguduktan sonra arasina ic kremanizi suruyorsunuz ve uzerini ikinci kekinizle kapatiyorsunuz.Son olarak da uzerini kremayla susluyorsunuz. Ben en ustunu yaban mersiniyle susledim siz, dilediginizi ekleyebilirsiniz..

Chocolate Cake with Berry Mascarpone Frosting

300 g (1 1/2 cup) all purpose flour 200 g (1 cup) sugar 90 g (2/3 cup plus 2 tsp.) organic cocoa powder 1 tsp. baking soda 2 tsp. baking powder 1 tsp. salt 2 eggs, at room temperature 240 ml (1 cup) buttermilk, room temperature 240 ml (1 cup) coffee, hot 120 ml (1/2 cup) coconut oil or sunflower oil and 1 Tbsp. vanilla extract

Preheat oven to 350 F/ 180° and Prepare two ( 20 cm) cake pans, line bottom of pan with parchment, butter paper, and dust with flour. Sift flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of a stand mixer. Transfer bowl to mixer fitted with paddle attachment.

In a separate medium bowl, lightly beat together eggs, buttermilk, coffee, oil, and vanilla. Add wet mixture to the dry mixture and mix on medium speed just until combined. Divide batter evenly among prepared pans. Bake for 25-35 minutes, rotate pans, and bake another 7-9 minutes, or until tester inserted in the center comes out almost clean (with just a few crumbs). Cool cake in pans on wire rack for 20 minutes. Run a blunt (butter) knife along edges of cake then gently invert onto racks to cool completely before assembling.

Frosting 56 g (1/4 cup) butter, at room temperature 230 g (2 cups) confectioner’s sugar 450g (16 oz.) mascarpone, softened 113 g (4 oz.) cream cheese, softened 125 gr black berry ( add black berries in a small sauce pan and add 1 tablespoon sugar and 2 tablespoon water.. Bring to a simmer over medium heat and stir constantly until blackberries have become soft enough to mash effortlessly.It will look like blackberry jam.)

In the bowl of a stand mixer fitted with the whisk attachment, beat butter and sugar until combined. Add mascarpone and cream cheese and mix just until combined, no more than one minute. Add 1 tsp black berry mix and combine well.

Filling 2-3 Tbsp. prepared frosting rest (2-3 tablespoon) black berry mix..

In a small bowl, stir together black berry mix with frosting.

when you have a cold cakes (after cooking) , then you can start to create your cake. use your filling between 2 cakes and finish with your frosting.
